1/2 cup rice
1/4 toor fee dal
2 tablespoons ghee
1 cinnamon stick
1/3 cup peas
1/2 cup potatoes
1 teaspoon ginger
1/4 cup moong dal
1 teaspoon cumin
1/4 teaspoon asafetide
1/2 teaspoon sugar
1/2 cup cauliflower
1 bay leaf
5 sprigs of coriander leaves

Dry 1 dal and wash the rice and lentils
First, wash the legumes and soak them in water for a while. After that, take a bowl and wash the rice with running water 5-6 times and leave it to soak for half an hour.
Fry 2 potatoes and cauliflower in ghee
Now put a pressure cooker on medium heat and heat the ghee in it. When the ghee is hot, add cumin seeds, bay leaves, asafètida, cinnamon and fry for a few seconds. After that, add the turmeric, ginger paste and fry for 2-3 minutes. Finally, add salt and sugar along with the potatoes, peas and cauliflower. Stir well and cook over medium-high heat for 2-3 minutes. When the vegetables are cooked, add soaked rice along with lentils. Mix all ingredients well and cook for 4-5 minutes.
3 Cook the khichdi under pressure
Now put 3-4 cups of water in the rice and close the lid of the pot. Cook under pressure for 3 whistles and turn off the gas. Let the steam escape alone and serve hot with a little ghee, papad, pickle and raita.
4 Tips to Make a Perfect Khichdi at Home
1. Well-made khichdi is delicious, high in protein and also healthy. And the best way to do it at home is to do it in a simple way with fewer spices. Try to use only asphyxide, cumin and turmeric while making the dish.
